Fish species in the kitchen: Sciarrano Serranus scriba Linnaeus, 1758

Fish with an elongated body compressed on the sides with a reddish-brown color organized in vertical bands (from four to seven). A showy spot of light blue is present on the sides and a complicated blue and red design on the muzzle and on the head. It can be up to 25 cm long. Synchronous hermaphrodite individual, with both female and male characteristics.
Widespread in the Mediterranean Sea, the Black Sea and the eastern Atlantic Ocean: from the Gulf of Gascony to southern Africa. Rarely does it go below thirty meters deep and its ideal habitat is made up of rocks, stones stacked on top of one another, grasses and sand.

Purchase and conservation

Fishing seasonality: fishing all year round, but especially in the summer months.
Lo Sciarrano has meats of moderate commercial interest; it is generally sold fresh or frozen mixed with other species.

Use in the kitchen

There aren't many ways to cook sciarrano.

Sciarrani and tracine soup
Clean the sciarrani and the shoulder straps, put them in a pan with half a glass of extra virgin olive oil, a bunch of parsley, half a glass of lemon juice and a lemon cut into slices. Add salt and pepper and cook over low heat for half an hour.
